The Cuisine of Northeast Thailand

The very spicy and heavily seasoned dishes of the northeast can be traced back to the Lao influence in this region. The typical sour-salty taste of the food in Isan is known by locals as saeb. The sticky rice popular in the north is primarily eaten here as well. Many recipes use eggplant, mushrooms and bamboo. Som tam, green papaya salad with shrimp, lemon juice and chili is certainly the best known dish from the northeast and is a good example of saeb. Another recipe that is typical for northeast Thailand is Kai yang Isan, chicken marinated in herbs and honey and grilled on an open fire.
