The Cuisine of Northern Thailand

In northern Thailand food is cooked more mildly than in other regions. However chili is an ingredient still fondly used in curries. Thais in the north prefer sticky rice, khao niao, which is shaped into little balls and dipped in sauces or dips. The Burmese influence is also noticeable in northern Thai cuisine. Typical examples of this include the dish kaeng hang lae, pork with peanut and ginger curry and khao soi, a curry with egg noodles, meat and coconut.
