Thais in the south are known for their impulsive mentality. The cuisine also reflects this characteristic. The south cooks as spicy, sour and salty as possible. Vegetables, both raw and cooked, are found in almost every dish. The most frequently used vegetable is a type of bean known by the name sato, which has a spiciness similar to garlic. The most favorite dishes in the south are the fish curry kaeng tai pla and kaeng luang, a very spicy curry. There is also a very strong influence of Muslim cuisine in this region: a dish typical of this is khao mok kai consisting of saffron rice and marinated chicken.
